Those who love the earth would say that there is nothing in the world more beautiful than rich and fertile soil with fields of wheat waving in the wind! This has been our enthusiastic dream for the past 11 years, as we began to cultivate the land surrounding us.
In a 2.5-acre circular garden and three adjacent greenhouses, we are presently growing all cold climate vegetables such as leeks, carrots, beets, cabbage, potatoes, onions and celery, lettuce and various kinds of squash and zucchini, as well as numerous aromatic plants.
During the summer months, when the garden is in full production, it can easily feed up to 150 people (with good appetites!) Despite difficult climatic conditions, the soil, when carefully and intelligently prepared, produces a generous crop of tomatoes, squash, bell peppers, cucumbers, etc…
The property, just recently fenced in to protect it from wildlife, is adorned with two rivers, a small pond, many springs, and one new-born orchard.
Its older sibling-orchards have approximately 450 very old giant trees, and it has been newly planted with about 350 apple, cherry, plum, pear and apricot trees.
We are working to develop an entirely organic environment devoid of harsh chemicals. Our ecology is one of great respect for the Earth, and we open-heartedly welcome all new ideas, methods and advice which might help us grow and develop in this direction.
We take good care of our environment and forest areas, and are working towards cultivating cereals such as wheat, oats, rye, barley, buckwheat and fodder plants. Our aim is to become totally self-supporting as far as food is concerned.
This project, like a seed, is growing peacefully to the rhythm of the seasons and cycles of Nature who, in return, lavishes us with her abundant and healing gifts.
Other future projects include building cold storage rooms for fruits and vegetables as well as a facility for the making of apple juice, preserves and honey, the acquisition of cows, sheep and chickens, and the creation of a non-transgenic seed bank.
